Ingredients:

  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 green peppers, sliced into strips
  • 2 cans kidney beans, drained and rinsed
  • 1 low sodium chicken bouillon cube

Directions:

  1. Heat olive oil in large skillet over medium heat. Add onions and garlic to pan and sauté for a few minutes until soft.
  2. Add peppers and stir. Saute for another 2 minutes.
  3. Add kidney beans and bouillon cube. Lower heat and stir until bouillon cube is dissolved and beans are heated through.
